Until next year...

My SiL's stay has ended but we went out with a bang, her final cooking lesson was a big one - a full meal!
She had mentioned that she loves Spanish Rice but it seemed too complicated to make at home. Never! Nothing is impossible and I just happened to have the simplest recipe ever.

But you can't just have Spanish Rice for dinner so I put her to work making Taco Ribs and guacamole too.

The meal was finished off with chocolate covered strawberries. All simple dishes that seemed daunting in the beginning turned out to be very easy for her to make.

Except for one moment when I yelped as she held something in her hand and and tried to cut it (good lord - next year she gets a knife skills class), everything else went well. I taught her how to time it all perfectly and when she served it to the kids the loved it.

Goodbye to my favorite nanny. I love her a lot and I will miss her. I hope she take the cooking skills I've taught her and she uses them well.

oh goodness. let me just tell you how SCARRED my hands are from holding food and trying to cut it when I was in a rush! I literally threw out all of my knives in 2012 because each cut was worse than the last and I didn't seem to be learning/slowing down/taking the time to clean off the cutting board. Such a nightmare.
